Shortbread



The most amazing shortbread is made from butter, sugar and flour! That's it! No need for anything else.

125g butter (I use normal salted butter)
55g caster sugar
180g plain flour

Whisk the butter and sugar together until light and fluffy, stir in the plain flour and knead lightly to get your dough. Roll out thickly (really important) The dough needs to be 2cm thick. Cut out your shapes and put on a greased baking tray. PUT IN THE FRIDGE for 30 minutes before baking.
Bake at 190C until cooked through - about 15 to 20 minutes. Don't allow them to go brown. Remove from baking tray when cooled slightly and put on a cooling rack.
