Left over Quiche
I made this quiche today with all my leftover cheeses from Christmas. There is smoked cheese, cheese with chilli and a good strong cheddar. There is also half a pack of streaky bacon.
Make a short crust pastry. I use half lard and half margarine, plain flour, pinch of salt and cold water to make my pastry. I don't bake blind as I don't feel there is a need to. This quiche has 6 eggs and half a pint of milk.
Mix eggs, milk, cheese and bacon and pour into the short crust pastry base. Bake for about an hour at 140 degrees
