Spanish Chicken

The inspiration for this dish came from the Hairy Bikers. I adapted (as you do) to make it even more delicious. This is a very healthy low fat dish.

Serves 4 people


You will need:

8 chicken thighs (skinless and boneless) although any chicken pieces will do really.
500g potatoes (I used a mixture of sweet potato and new potatoes)
3 onions
10 cloves of garlic
75g chorizo
1 teaspoon of oregano
1 teaspoon of smoked paprika
1/4 pint of chicken stock
1 tin of tomatoes
10 cherry tomatoes
1 pepper ( I used yellow and red because they were quite small)
Salt
Black pepper
Spray oil

Turn the oven to 200C

Spray the baking tin with spray oil
Chop the potatoes into chunks and add to a large baking tin.
Quarter the onions and toss them in too.
Throw the garlic in unpeeled.
Pour in one tin of tomatoes and add the cherry tomatoes. Sprinkle generously with salt and pepper.
Put this into the oven for 20 minutes.
After 20 minutes take out the tin.
Peel and slice the chorizo into thin slices and add to the potatoes.
Put 2 or 3 slits into the chicken thighs and put them on top of the potatoes and chorizo.
Sprinkle the oregano and smoked paprika over everything.
Put back into the oven for 20 minutes.
Take out of the oven and add 1 quarter of a pint of chicken stock and sprinkle the Sliced pepper over the top.
Turn the oven up to 220C and ut back into the oven for about 20 minutes until the chicken and potatoes are cooked.
Serve with crusty bread.

Tandori Whole chicken

A whole chicken, skinned with gashes cut into the flesh
Mix the juice of a lemon and 1 teaspoon of salt together and rub all over the chicken
Leave for an hour

In the meantime put an inch block of ginger root, 4 garlic cloves peeled and a red chilli in a blender with 6 fluid oz of set natural yog. Blend. Then add 2 teaspoons of coriander, 1 teaspoon of cumin and 2 teaspoons of garam masala....mix again....

Rub this all over the chicken, refrigerate overnight. Preheat oven to highest setting and put in chicken for about 20 mins....then turn heat down to 180ish and cook until done....you might need to cover it at some point if it starts to look too well done.

Very low fat and healthy and very tasty cold with salad or for sandwiches and a fraction of the cost of buying ready made tandori If you want the red colour then add a few drops of red colouring into the marinade...I dont bother

Persian Chicken Tagine

Chicken Tagine



low fat cooking spray
4 chicken breasts(cut in chunks)
1 medium onion,chopped
4 garlic cloves,crushed
1 stick celery,chopped finely
2 medium carrots, chopped finely
1 tbs plain flour
1/2 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground tumeric
150ml(5 fl oz) white wine
600 ml(1 pint) chicken stock
2x400g cans cannelli beans
bunch of fresh coriander, chopped
salt and freshly ground black pepper

Heat a casserole or large heavy-based saucepan on the hob and spray with low fat cooking spray. Add the chicken, season and brown, then remove. Add the onion, garlic, celery and carrots to the pan and cook for 10 minutes, until softened, stirring occasionally.
Mix the flour with the spices and stir in, cooking for 2 minutes. Return the chicken to the pan, pour the wine and stock over, season, cover and cook on a low heat for 45 minutes.
Add the canneli beans and cook for a further 5 minutes, then sprinkle the coriander over and serve. Serve with rice

Sizzling chicken platter

4 boneless chicken breasts
1 tsp of hot chilli paste
4 tbsp of olive oil
3 tbsp lemon juice
Lettuce
Cucumber
radishes
mint leaves
for the dressing 2 ripe vine tomatoes seeded and finely diced
1 tsp of hot chilli paste
1 tbsp of lemon juice
4 tbsp of olive oil

Slice the chicken into strips combine chilli paste, lemon juice, olive oil and salt pour over chicken and leave for a couple of hours or overnight make the dressing combine chilli, lemon juice and chopped tomato Use a wok to cook the chicken strips make a bed of salad (you can use what you like really) Pile the chicken on top and pour over the dressing

Spicy Chicken burgers

4 chicken Breasts
One red pepper
2 cloves of garlic
1 red onion
1 teaspoon of coriander, cumin and tumeric
2 teaspoons of chilli powder
a good twist of salt and pepper
2 teaspoons of olive oil
2 slices of Bread

Whizz up in food processor and then with wet hands form into burgers. Fry gently for a couple of minutes on each side in olive oil then put into oven at 180C for about 15 mins or until cooked right through.
